Pad Prik King 🔥😍 Excuse the rubbish plating, I was too hungry to plate it up artfully 😂 Thai food is one of my favourite cuisines and luckily it's not too hard to cook at home, if you have the ingredients. This recipe is by the amazing @seonkyounglongest (her recipes never disappoint). Beware though, this dish is spiiicy 🌶️🥵

Pasta alla Vodka 🍸🍝 This old school 80s recipe has been making a comeback and after Gigi Hadid posted about it on Insta last year, I knew I had to try it! I followed @halfbakedharvest recipe for Spicy Pesto Pasta alla Vodka and it was divine 😍 It's classy comfort food 🤤 The vodka adds subtle depth to the tomato in the sauce and enhances it's flavor. Don't worry, most of the alcohol gets burned off during cooking so you won't get that ethanol taste (although in Nigella's recipe, she adds the vodka in at the end 👀😈)

Harrissa Roasted Cauliflower and Chickpea Salad 🥗 (Ve)

My first recipe of 2021 is up on the blog 😌 And what better way to kick off Veganuary than with this warm, spiced salad, featuring harissa roasted cauliflower and crispy chickpeas flavoured with ras-el-hanout. The whole thing is served on kale with an earthy, tangy tahini dressing 😍 This works great as a vegan main for lunch, or as a side salad with grilled chicken.

Are you trying Veganuary this year? I'm trying a "flexitarian" approach I.e. eating plant-based most of the time. It's a great way to learn new plant-based recipes but still keep the cheese cravings in check 😆

Christmas Grazing Board 🍇🥖🧀🫕

I love an artfully curated grazing board, with nibbles and chutneys and fruit and cheese. It's like a beefed up cheeseboard 😍. This was my first Christmassy spread of the festive season but it definitely is not going to be my last 😈

The star of the show for me is always the baked camembert, perfumed with garlic and rosemary - so tasty with cranberry sauce! This time I included a vegetarian mushroom pâté from M&S and it was looovely 😍 To turn this into a full meal, I got some tasty diddy beef and chicken pies, also from Marksies. I served the bresoala with a drizzle of EVOO and a squeeze of lemon juice, with parmesan shavings, which was a divine combo.

Nothing like a cheeseboard to get you in festive spirits! 🎄🎁🎅🏾

Vegan Mac 'n' Cheese

Featuring a creamy, dairy-free sauce and a herby, zingy breadcrumb topping, this is the ultimate comfort food revamped. The cheesy flavour comes from yeast flakes and common store-cupboard seasonings. Vegan cheese is optional but not necessary.

The sauce is a standard béchamel made from vegan milk and vegan butter - I think this version tastes even better than the dairy version!

Sunday Roast 🍽️🍷 I spent most of my weekend in bed with a migraine 🥴 but managed to recover enough to rustle up my first roast dinner in a while. Sadly couldn't shoot any photos this weekend, but I'm hoping to have some Christmassy recipes up on the blog soon 🎄 Let me know in the comments if you have any recipe requests! 🎀🎇

Potato Gnocchi 🇮🇹 These little Italian potat

Potato Gnocchi 🇮🇹 These little Italian potato dumplings are so addictive and make a nice change from standard pasta. If you're new to making fresh pasta, I feel like gnocchi is a great entry point as it's harder to mess up 😆 Serve them up with your favourite pasta sauce or if you're feeling filthy, pan fry them in butter and grate over plenty of parmesan 👅 Recipe is up on www.vaithehy.co.uk

Honey miso chicken thighs and sesame broccoli with

Honey miso chicken thighs and sesame broccoli with brown rice 😌 So so tasty but so simple. Served with coriander and a lime wedge for a burst of herby freshness 😍 Save this post for my recipe below!

🍗 I marinaded the chicken thighs for about an hour and then oven roasted for 40 mins at 180 degrees until nice and sticky. Here's a rough idea for the marinade:

1 tsp dark soy sauce
1 tsp light soy sauce
Heaped teaspoon honey
1 tsp miso paste
1 tsp shaoxing wine
1 tsp Chinese chilli oil
1 tsp ginger paste
1 tbsp garlic paste
Drizzle of toasted sesame oil

🥦 For the broccoli, cut into small florets, stir fry on high heat in toasted sesame oil for a minute, add a tablespoon of water to the pan and pop the lid on to gently steam the veg for 5 minutes. Serve with sesame seeds on top.
